Pistachio-Crusted Salmon

4 salmon fillets (1 inch thick and 6 oz. each)
1 tsp. sea salt
1/2 tsp pepper
1/4 c. mayonnaise (mixed with lemon juice and dill weed
as you prefer)
1/2 c. finely chopped pistachios*(cover fillet completely)
Place fillets on a greased baking sheet, sprinkle with
salt and pepper. Spread with mayonnaise
mixture and sprinkle with pistachios.
Bake at 375° for 15-20 minutes. Serve across a tossed salad or as the
entree for a meal.
(* optional: can use macadamia nuts or pecans)
