Au Gratin

Cheese sauce:
½ cup finely chopped onion

cup margarine

Tablespoon flour
1
teaspoon salt
¼
teaspoon pepper
2
c. milk
2
c. shredded cheddar cheese
¼
cup fine dry bread crumbs
2-3 pounds of potatoes, peeled, and sliced
Cook and stir
onion in margarine in a 2 quart sauce pan.
Stir in flour, salt, and pepper. Cook over low heat. Stir constantly. Remove from heat. Stir in milk and 1 ½ cup cheese. Heat to boiling, stirring. Boil 1 minute.
Put potatoes into a casserole dish. Pour sauce over potatoes. Top with remaining cheese and crumbs.
Bake at 325 degrees for 45 minutes.
