Pickled Mango
Auntie Shirley

Peel and slice about 12 mangoes
boil 6 cups of water

Prepare in a large bowl:
1/2 c. Hawaiian salt
2 TBS red food coloring (optional)
4 c. brown sugar
1/2 tsp. Five Spices
3 pkg. (med) Sweet sour Li Hing Mui
2 c. Cider vinegar

Pour boiling water over mixture, stir until sugar dissolves, let cool.  Place peeled mangoes in gallon jar.  Pour cooled liquid mixture in gallon jar.

Prune Mui

8 pkg. (12oz) pitted prunes

Prepare:
1(6oz.) pkg. mui lemon peel
1(4oz.) [kg. Li Hing Mui
1lb light brown sugar
3 TBS Hawaiian Salt
1 tsp. 5 Spices (optional)
10 pieces whole cloves (optional)
1-1/2 c. lemon juice


Place prunes in gallon jar, pour sauce over and let stand for one day.
