Stuffed Bitter Melon

cut bitter melon in 1- 12 long pieces. 
Hollow out seeds (throw away)

Stuffing
1 lb. ground turkey  
2 large eggs
1 tsp. salt
1 Tbs. shoyu
3/4 c. PANKO or bread crumbs
Mix well and stuff bitter melon.  Place in large pan or pot.  Add 1 can of Swanson's Chicken Soup.  Simmer for one hour.  Ready to serve. 

(The shorter time you simmer, the more bitter it will be.  Excellent for Chinese medicinal use.)
