PuPus (Appetizers)
Rainbow Finger Jell-O

4 package Jell-O (.3 ounces)
6 envelopes Knox gelatin-unflavored
1 cup evaporated milk.  Can use skim or nonfat evaporated milk.
13 x 9 x 2 inch pan, lightly greased with oil or lightly sprayed with a nonstick spray.

  1. 1.       First layer:  1 package Jell-O with 1 envelope KNOX gelatin and 1 cup hot water (3/4 cup boiling + ½ cup cold water) to mix Jell-O and gelatin.  Cool.  Set in refrigerator for 20 minutes.
  2. 2.      Mix 1 cup condensed milk with 1 cup hot water
  3. 3.      Mix 2 envelopes KNOX gelatin with 1 cup hot water.
  4. 4.      Mix milk and gelatin in steps 2 and 3.  Set aside.
  5. 5.      Pour about 1 cup of milk mixture over Jell-O.  Set in refrigerator for about 20 minutes.
  6. 6.      Alternate the rest of the Jell-O and milk.  Ending with Jell-O.  Each layer sets quickly, about 20 minutes.  Mix each Jell-O separately.
  7. 7.      Cut in squares when set.
