Almond Cookies

Our favorite cookie recipe!

1 cup + 3 tablespoons shortening or butter
1 cup sugar
1 egg, beaten
1 teaspoon almond extract
2 ½ cups flour
½ teaspoon salt
½ teaspoon baking soda
Red food coloring
Almonds, blanched (optional)

Beat shortening and sugar; add egg and almond extract. Mix well. Sift flour, salt, and baking soda; add to sugar and egg mixture. Mix well. Shape into walnut-size balls. Place on ungreased cookie sheet. Using thumb, press center of balls to make a depression. Using the end of a chopstick, dip in red food color and place dot in the center of each cookie. A blanched almond may be pressed into the center if preferred. Bake at 350 degrees for 15-18 minutes. (I always double the recipe.)
