(This is a regular
dish in our family)
My mom is the best cook. She cooks with so much love and
care.
Any vegetables you love.
We use mushrooms, zucchini, yellow squash, carrots, sweet
potatoes, potatoes, eggplant, red peppers, tomatoes and the list goes on…
Cut in medium or large pieces. Your preference. Be sure
the pieces are the same size so the veggies roast through at the same time.
Toss veggies in olive oil, sea salt, fresh black pepper and lots of fresh
garlic cloves.
Spread out in cookie sheet. Roast in hot oven at 425
degrees for about 30-45 minutes or until your veggies are the way you like
them!
